Who Zamasu is
Zamasu was the most gifted Kai of his generation, chosen to succeed Gowasu as Supreme Kai of Universe 10. He watched mortals fight and lie and waste the worlds the gods gave them, and decided the gods were the ones at fault for letting it go on. Losing a sparring match to Goku, a mortal, made it worse.
So he wrote the Zero Mortals Plan. He killed Gowasu, took his Time Ring, and used the Super Dragon Balls to swap bodies with Goku, which made him Goku Black. In Future Trunks' timeline he met that world's Zamasu, who had wished for an immortal body, and the two of them set out to erase every mortal in existence.
What happens to Zamasu
Manga spoilers, through the last chapter.
Beerus destroys the present-day Zamasu with a Hakai the moment Whis proves the plan. The future one fuses with Black into Fused Zamasu, is cut in half by Trunks, and spreads across the sky as Infinite Zamasu, a face with no body that cannot be hit. Goku calls Future Zeno, who erases the timeline and Zamasu with it.
Super Dragon Ball Heroes, which is not canon, brings him back as part of its own villains. In the main story he is gone.

- Why does Zamasu hate mortals?
- He believes mortals ruin every world the gods give them and that the gods are guilty for allowing it. Watching a planet of warriors destroy itself, and then losing to Goku in a friendly match, turned that belief into the Zero Mortals Plan.
- Is Zamasu immortal?
- The future one is. He wished for an immortal body with the Super Dragon Balls, which is why nothing Goku and Vegeta do to him sticks. Goku Black kept a mortal body so he could grow stronger through injury.
- Does Zamasu die?
- Every version of him ends. Beerus destroys the present one. The future one, fused with Black, is cut by Trunks, becomes Infinite Zamasu, and is erased with the whole timeline by Future Zeno.
- Is Goku Black the same as Zamasu?
- Yes. Goku Black is Zamasu in Goku's stolen body. Fused Zamasu is that Black fused with the immortal future Zamasu through Potara earrings.
